Private Dinner Party, Jan and Family

This weekend was another superb one of amazing food combined with a fabulous atmosphere when we cooked for Jan and family in Southampton. I have know Jan for quite a few years through her flower business so it was lovely to cook for everyone, aiding the celebration of a special birthday. We had two pescatarian guests at the table and two meat lovers so opted for a split choice menu to suit all. After canapes and four courses, everyone was suitably full, offering some great compliments on all the courses :)

Canapes:

Crisp Confit of Pressed Pork Belly,
Saute Calamari, Garlic and Lemon, Black Pepper, Spring Onion, 
Soused Carrot, Celeriac and Chilli 'Slaw,
Sea Salt Crackling,


Main-Course:

Pave of Pan Seared Fillet Steak, Oxtail and Cheek Ragout, Blue Cheese Croute,
Dauphinoise Potatoes, Roasted Carrots, Carrot Puree, Carrot Crisps,
Red Wine Gravy,

OR

Sea Bass Fillet, Sea Bass "Fish Cake" Lemon Butter Sauce,
Dauphinoise Potatoes, Glazed Carrots, Asparagus Spears, Green Beans,
